Steps

  • Heat 60ml of olive oil in a wide saucepan and sizzle garlic and basil stalks for 1 minute.
  • Stir in the tomato purée, chopped tomatoes, and sugar.
  • Season with salt and pepper and simmer for 5 minutes until thick.
  • Stir in the chopped basil leaves just before finishing the sauce.
  • For meatballs, fry sausage meat for 10 minutes until browned and cooked through.
  • Combine the cooked meatballs or mascarpone with the tomato sauce and pasta.
  • Add 30ml of pasta cooking water to thin the sauce if necessary and serve.
