Steps

  • Clean and debeard the mussels, discarding any that remain open when tapped.
  • Heat olive oil in a heavy-based pan and soften shallots and garlic without browning.
  • Add the wine and boil for one minute to evaporate the alcohol.
  • Add mussels and most of the parsley, cover, and cook for 3-4 minutes while shaking the pan.
  • Discard any unopened mussels and serve in a bowl with the liquid and crusty bread.
