Steps

  • Grease a 20cm square baking tin with vegetable oil.
  • Heat the butter, sugar, and golden syrup in a heavy-based pan until the sugar dissolves.
  • Boil the mixture rapidly without stirring for approximately 5 minutes until it turns golden-brown.
  • Add the bicarbonate of soda and stir for a few seconds until the mixture expands.
  • Pour the honeycomb into the prepared tin and leave until cold and set.
  • Cut the set honeycomb into pieces or process into crumbs for serving.
