Steps

  • Combine honey, oyster sauce, chilli flakes, star anise, salt, and ground peppercorns in a roasting tin.
  • Toss the ribs in the marinade and tuck whole garlic cloves between them.
  • Let the ribs marinate for at least two hours or overnight.
  • Roast at 160°C for 90 minutes while turning the ribs occasionally.
  • Increase the oven temperature to 200°C and roast for 15 minutes.
  • Remove from oven when the ribs are sticky, charred, and tender.
