Steps

  • Preheat the oven to 220°C.
  • Heat an ovenproof griddle pan until very hot and soak bamboo skewers in water.
  • Thread chicken and courgette chunks onto the soaked skewers.
  • Brush the pan with oil, add skewers, season with salt and pepper, and griddle until charred.
  • Drizzle honey over skewers and roast in the oven for 6 to 8 minutes until cooked through.
  • Toss parsley leaves with remaining oil and balsamic vinegar in a bowl.
  • Serve the skewers on a warm plate topped with the dressed herbs.
