Steps

  • Preheat the oven to 200°C.
  • Heat 1 tbsp oil in an ovenproof pan and brown sausages for 3 minutes.
  • Transfer sausages to the oven for 12 minutes until cooked through.
  • Soften shallots in 1 tbsp oil, then add rosemary and garlic for 2 minutes.
  • Add tomatoes and bring to a boil, then reduce heat to simmer.
  • Stir in stock and beans, simmering for 4 minutes until sauce thickens.
  • Stir in parsley and season to taste.
  • Drizzle remaining oil on bread and grill for 2 minutes per side until golden.
  • Serve beans over toast and top with sausages.
