Steps

  • Heat the olive oil in a large heavy-bottomed saucepan.
  • Add the onion, pepper, chilli, garlic, herbs, and meat and cook until softened for 5 to 10 minutes.
  • Add the soaked black beans and the crumbled stock cube.
  • Add enough water to cover the ingredients.
  • Simmer gently over reduced heat for 2 to 3 hours until the beans reach a stew-like consistency.
  • Season with salt and pepper and remove herb branches and the meat hunk before serving.
  • Garnish with fresh chopped coriander and marjoram to serve.
