Steps

  • Heat vinegar, sugar, and coriander seeds in a saucepan until sugar dissolves.
  • Shred cabbage, slice carrots into matchsticks, and slice radishes.
  • Pour the warm vinegar mixture over cabbage and carrots and pickle for 10 minutes.
  • Heat a griddle pan and butterfly the chicken breasts.
  • Massage olive oil, jerk seasoning, salt, and pepper into the chicken.
  • Cook chicken for 4 minutes per side on the hot griddle until done.
  • Rest the chicken briefly, then slice it into strips.
  • Drain the vegetables and wrap them with chicken inside the flatbreads.
