Steps

  • Mix flour, spices, and seasoning in a bowl.
  • Dredge halibut steaks in the flour mixture and shake off excess.
  • Heat oil and butter in a pan over medium heat until foaming.
  • Fry fish for 3 minutes per side until cooked through.
  • Optional: Roast thick steaks at 180°C for 4-6 minutes if needed.
  • Whisk tomato juice, vinegar, olive oil, and garlic for the salad.
  • Toss mixed beans, celery, and chilli into the dressing.
  • Mix yoghurt, dill, lime juice, and grated cucumber for tzatziki.
  • Season to taste and adjust consistency with water if required.
  • Serve fish over bean salad with a dollop of tzatziki.
  • Garnish with lime wedges and parsley.
