Steps

  • Combine milk, cream, both milks, sugar, and nutmeg in a pan and bring to a boil.
  • Simmer the mixture gently for 15 minutes then set aside to cool.
  • Blend guavas with 100ml water and sieve to create 500ml of smooth purée.
  • Stir the guava purée into the cooled milk mixture until well combined.
  • Pour into moulds and freeze overnight until solid.
  • Toss prepared fruit with passion fruit, lime juice, zest, and sugar.
  • Unmould the kulfi and serve immediately with the tropical fruit salad.
