Steps

  • Mix tomatoes, garlic, onion, chilli, and coriander for the salsa and rest for 30 minutes.
  • Mash avocados with lime juice to begin the guacamole.
  • Combine the mashed avocado with garlic, onion, tomato, chilli, and coriander.
  • Grill courgette and peppers in a hot pan for 10-15 minutes until softened.
  • Slice the grilled vegetables into thin strips.
  • Spread one tablespoon of guacamole and salsa onto each tortilla.
  • Place vegetables in tortillas, wrap them, and grill for one minute per side.
  • Garnish with coriander leaves and lime wedges before serving.
