Steps

  • Mash the butter, coriander, and chilli in a bowl and season with salt and pepper.
  • Toss the sweet potato slices in a bowl with olive oil, salt, and pepper.
  • Heat a griddle pan until smoking and cook potato slices for two minutes per side until tender.
  • Stack the warm potato slices on a plate and top with the prepared herb butter.
