Method

Soften the gelatine in a bowl of iced water for five minutes.

Bring the milk and cream to a boil in a small pan.

Squeeze excess water from the gelatine and stir it into the hot milk mixture until dissolved.

Pass the mixture through a fine sieve into a bowl.

Chill the bowl in an ice bath until the mixture begins to thicken.

Stir in the Greek yoghurt until the mixture is completely smooth.

Pour into four moulds, cover, and refrigerate for at least three hours.

Heat honey in a pan until boiling, then cook the figs for two minutes.

Unmould the panna cotta using hot water and serve with the warm figs and honey.
