Steps

  • Preheat the oven to 180°C.
  • Whisk flour, egg, milk, and sparkling water until the batter reaches the consistency of double cream.
  • Heat vegetable oil in a saucepan until a piece of bread sizzles.
  • Deep-fry battered salmon strips in batches for 1-2 minutes until golden-brown.
  • Drain the cooked salmon on kitchen paper.
  • Fry sweet potato and garlic in olive oil in an ovenproof pan for 3-4 minutes.
  • Transfer the pan to the oven and bake for 10-12 minutes until tender.
  • Serve the salmon goujons with the chips and a lemon slice.
