Steps

  • Mix rice wine, ginger, and spring onion in a bowl, then marinate fish for 20 minutes.
  • Combine breadcrumbs with chillies, salt, and pepper on a tray.
  • Coat fish in flour, then egg, then the seasoned breadcrumbs.
  • Heat oil in a wok and deep-fry fish for 3 minutes until golden brown.
  • Drain fried fish on kitchen paper.
  • Simmer sauce ingredients in a saucepan and thicken with cornflour mixture if needed.
  • Serve fish immediately with the sauce and roast sweet potato wedges.
