Steps

  • Boil unpeeled potatoes in cold water until tender.
  • Drain, peel, and mash potatoes while warm then allow to cool.
  • Mix mashed potatoes with salt, egg, and flour to form a dough.
  • Roll dough into four 30x3cm cylinders on a floured surface.
  • Cut cylinders into 2cm pieces.
  • Boil gnocchi in salted water until they rise to the surface.
  • Melt butter with sage leaves in a large frying pan.
  • Transfer gnocchi to the frying pan with a little cooking water.
  • Fry for one minute until coated and serve immediately.
