Steps

  • Mix all dry ingredients together in a large bowl.
  • Beat the eggs with the juice and brandy and stir into the dry mixture.
  • Sieve the flours together with the baking powder if skipping eggs.
  • Fold the flour thoroughly into the fruit mixture.
  • Spoon mixture into a basin, cover with doubled greaseproof paper, and tie with string.
  • Place basin in a deep pan with water halfway up the sides and simmer for 4 to 5 hours.
  • Discard paper, cover with fresh paper, and store in a cool place once cold.
  • Re-steam for 1 to 2 hours or microwave for 3 to 5 minutes to serve.
