Steps

  • Preheat the oven to 220°C.
  • Scrub, half-peel, and cut potatoes into 1cm chips.
  • Boil chips in a covered pan for 3 minutes, then drain and steam dry.
  • Heat olive oil on a tray in the oven for 1 minute.
  • Season chips with salt and pepper and bake for 30-40 minutes, turning once.
  • Fry pineapple rings in a sprayed pan over medium-high heat until caramelized.
  • Brown the gammon steak in the same pan over medium heat for 4-5 minutes.
  • Stir-fry Brussels sprouts in the pan for 3 minutes with a splash of water.
  • Serve gammon topped with pineapple alongside sprouts and chips.
