Steps

  • Mix the flour, bicarbonate of soda, and 1 tbsp chilli flakes in a bowl.
  • Stir in enough sparkling water to create a thick pancake batter.
  • Heat oil in a pan and fry spoonfuls of batter for 2 minutes per side until golden.
  • Melt sugar with water and 0.5 tsp chilli flakes in a small pan until golden.
  • Add spring onions, vinegar, and coriander, then simmer for 2 minutes.
  • Serve the fritters on a plate with the chilli jam on the side.
