Steps

  • Heat olive oil in a saucepan and fry chopped onion until soft.
  • Add garlic and fry for one minute.
  • Add peas, spinach, and 300ml hot stock, then bring to a boil.
  • Simmer for eight minutes until peas are tender.
  • Season with salt and pepper and blend with a hand-blender until smooth.
  • Pour into a bowl and garnish with chopped chives and olive oil.
