Preheat the oven to 170°C and line a baking tray with a silicone mat.
Write fortunes on strips of paper measuring approximately 6cm by 1cm.
Sift flour and cornflour into a bowl then mix in sugar and salt.
Stir in the oil, egg whites, water, and extracts using a wooden spoon.
Place tablespoons of mixture onto the mat and swirl into 10cm circles with a metal spoon.
Bake in batches for 10-12 minutes until the edges turn golden brown.
Place a fortune in the centre of each hot cookie and fold in half to seal.
Pull corners down over the rim of a cup to create the cookie shape.
Allow cookies to cool completely before serving.
