Steps

  • Mix the crushed biscuits with 30g of melted butter in a bowl.
  • Press the biscuit mixture into the base of a deep chefs' ring placed on a plate.
  • Combine the mascarpone, cream, honey, and lemon juice in a clean bowl.
  • Layer 3 tablespoons of fruit over the base, add the cream mixture, and top with remaining fruit.
  • Carefully remove the ring and serve the cheesecake.
