Steps

  • Preheat the oven to 190°C and line a tray with greased parchment paper.
  • Grate the cauliflower into rice-sized pieces.
  • Mix the base ingredients into a sticky dough using a bowl or food processor.
  • Spread the dough into a 30cm circle on the prepared tray.
  • Bake for five minutes, flip the base, and bake for another two minutes.
  • Tear the mozzarella into pieces and arrange them over the base.
  • Add 1cm thick tomato slices and optional chilli flakes.
  • Bake for 10-15 minutes until the cheese is bubbling.
  • Top with fresh basil and a drizzle of olive oil before serving.
