Method

Preheat the oven to 180°C.

Brush filo sheets with olive oil and layer them on a baking sheet.

Mix salmon, capers, lemon zest, and half the parsley in a bowl and season.

Spoon the salmon mixture onto the filo, roll into a sausage shape, and trim the ends.

Brush the pastry with oil, scatter with sesame seeds, and bake for 10 minutes until golden.

Melt butter in a saucepan and fry the onion for 4 minutes until softened.

Add mustard, peas, lemon juice, and cream, then simmer for 5 minutes to reduce by half.

Spoon the pea sauce onto a plate and top with the salmon parcel.

Garnish with chopped parsley and serve.
