Steps

  • Melt 15g of butter in a saucepan over high heat and stir in 15g of flour for one minute.
  • Gradually whisk in 100ml of milk to create a smooth sauce.
  • Add 50ml of cream and a splash of vinegar then simmer for three minutes.
  • Remove from heat and stir in the grated horseradish.
  • Heat oil in a pan and cook the steak for two minutes per side until done.
  • Plate half the sauce, mix chives into the remaining half, and top with the beef.
