Steps

  • Mix the flour, salt, and yeast in a bowl.
  • Stir the milk, water, and honey together in a jug.
  • Combine the wet and dry ingredients with yoghurt and oil to form a soft dough.
  • Knead the dough on a floured surface for five minutes until smooth.
  • Place dough in an oiled bowl, cover, and prove in a warm place for 90 minutes.
  • Knock back the dough and knead in the chopped figs and black pepper.
  • Divide into eight portions and roll each to 1cm thickness.
  • Place on floured trays, cover, and prove for 20 minutes.
  • Preheat the grill to medium and cook flatbreads for 3 minutes per side.
