Dissolve the yeast in warm water and mix with sugar.
Combine flour and salt on a work surface and make a center well.
Pour yeast mixture and remaining water into the well and mix into a dough.
Knead the dough for 8 minutes until it no longer sticks.
Place dough in an oiled bowl, cover with a damp cloth, and leave for 2 hours.
Knock back the dough on a clean surface to reduce its size.
Knead in the oil, feta, pepper, and mint until combined.
Divide the dough into four equal pieces and shape into loaves.
Place on a floured tray, cover, and let rise for 60 minutes.
Preheat your oven to 180°C.
Brush the dough portions with the beaten egg.
Bake for 30 minutes until golden-brown and then leave to cool.
Boil butter and honey, then add dates and pistachios and cook for 2 minutes.
Slice the bread and serve with the honeyed dates.
