Steps

  • Blend all sponge ingredients in a food processor until smooth.
  • Pour mixture into a greased 570ml pudding basin.
  • Cover with cling film and microwave on high for five minutes until springy.
  • Simmer cranberries, orange juice, zest, and honey in a pan for five minutes.
  • Turn the sponge out onto a plate and pour over the cranberry mixture.
  • Serve immediately with double cream.
