Steps

  • Soak dried noodles in boiling water for five minutes until cooked.
  • Drain and rinse the noodles under cold water.
  • Peel and grate the carrot and thinly slice any other vegetables.
  • Whisk together the soy sauce, honey, ketchup, and lemon juice in a bowl.
  • Heat oil in a wok and fry the garlic for a few seconds.
  • Add the carrots, spring onions, beans, and optional protein to the pan.
  • Stir fry for two minutes on high heat.
  • Pour in the sauce and a splash of water and adjust seasoning to taste.
  • Toss in the cooked noodles and beansprouts.
  • Stir everything over high heat for two minutes and serve.
