Soak dried noodles in boiling water for five minutes until cooked.
Drain and rinse the noodles under cold water.
Peel and grate the carrot and thinly slice any other vegetables.
Whisk together the soy sauce, honey, ketchup, and lemon juice in a bowl.
Heat oil in a wok and fry the garlic for a few seconds.
Add the carrots, spring onions, beans, and optional protein to the pan.
Stir fry for two minutes on high heat.
Pour in the sauce and a splash of water and adjust seasoning to taste.
Toss in the cooked noodles and beansprouts.
Stir everything over high heat for two minutes and serve.
