Steps

  • Pour 300ml of hot chicken stock into a small saucepan.
  • Add the sliced onion and duck breast to the liquid.
  • Simmer for 4 minutes until the onion is soft and duck is cooked through.
  • Stir in 40g of chopped baby sweetcorn.
  • Season with salt and pepper and simmer for 3 minutes.
  • Transfer to a bowl and garnish with coriander leaves to serve.
