Steps

  • Heat vegetable oil in a heavy-bottomed saucepan until a breadcrumb sizzles.
  • Fry tortilla triangles until golden then drain on kitchen towels.
  • Cook beans, peppers, coriander, paprika, and chilli flakes in a heated pan for four minutes.
  • Blend the bean mixture in a food processor until smooth.
  • Stir in olive oil, parsley, and lime juice then season with salt and pepper.
  • Serve the bean dip in a bowl alongside the fried tortillas.
