Steps

  • Heat deep-frying oil in a deep pan to 180°C.
  • Season chicken wings and fry for 8 minutes until golden and crisp.
  • Drain wings on paper and season with salt.
  • Sauté onion, garlic, chilli, fennel, and brown sugar in olive oil.
  • Stir in soy sauce and ketchup, then simmer briefly.
  • Simmer vinegar, caster sugar, and soy sauce in a boiling pan.
  • Add red chillies, chipotle, and ginger to the vinegar mixture until sticky.
  • Rub steaks with oil and seasoning, then griddle for 2 minutes per side.
  • Serve chicken with BBQ sauce and parsley, and steak with chilli sauce.
