Steps

  • Whisk the egg yolks and sugar together in a bowl until well blended.
  • Place finely chopped thyme, 300ml milk, and 300ml cream into a pan and bring to the boil.
  • Remove the pan from heat and pour a small amount of the hot liquid onto the egg mixture while mixing well.
  • Return the mixture to the pan and stir lightly over heat to thicken without boiling.
  • Stir with a wooden spoon until the custard coats the back of the spoon.
  • Remove from heat and pass through a sieve into a clean saucepan to remove thyme leaves.
  • Leave to cool completely while stirring occasionally.
