Steps

  • Heat 30ml of oil in a frying pan and sauté onions, garlic, and peppers for 4 minutes.
  • Fry aubergine cubes in remaining oil in batches for 6 minutes until golden-brown.
  • Set fried aubergines aside on a warmed plate.
  • Stir paprikas and cumin into the onion mixture and cook for 1 minute.
  • Add tomatoes, sugar, aubergines, salt, and pepper to the pan.
  • Pour in 350ml of water and bring the mixture to a boil.
  • Simmer for 20 minutes until the sauce has thickened.
  • Serve topped with parsley and lime wedges.
