Steps

  • Heat the olive oil in a saucepan and sweat the onion and garlic.
  • Add 150ml water and 200g spinach, stirring until the spinach wilts.
  • Season with salt and pepper, stir in the crème fraîche, and heat through.
  • Blend with a hand blender until smooth and pass through a sieve into a bowl.
  • Sprinkle with parsley and serve immediately.
