Steps

  • Boil 5cm of water in a saucepan, add cauliflower, and cook for 8 minutes until tender.
  • Drain the cauliflower and return it to the pan.
  • Mix cream cheese, mustard, and blue cheese with the cauliflower and season with salt and pepper.
  • Transfer the mixture to a shallow gratin dish and scatter walnuts on top.
  • Cover with grated cheddar and grill for 10-15 minutes until golden and bubbling.
  • Serve immediately with watercress salad.
