Steps

  • Preheat the oven to 180°C and prep a bowl and baking sheets with oil.
  • Mix dry ingredients in one bowl and wet ingredients in another before combining them.
  • Knead dough on a floured surface until elastic and prove for 10 minutes twice.
  • Incorporate cranberries and candied peel into the dough and prove for 30 minutes.
  • Divide dough into 12 balls and prove under a damp towel for 20 minutes.
  • Insert a spoon handle into each ball to stretch the dough into rings.
  • Poach bagels in boiling sugar water for 30 seconds per side and place on trays.
  • Brush with egg, top with crushed sugar, and bake for 20-25 minutes until golden.
