Steps

  • Whisk the eggs and two-thirds of the spring onions together in a bowl.
  • Melt 25g of butter in a small frying pan until it begins to foam.
  • Pour in the egg mixture and cook for two minutes.
  • Preheat the grill to a high setting.
  • Sprinkle the crabmeat and Taleggio over the omelette and season with salt and pepper.
  • Place the pan under the grill and cook for four minutes.
  • Slide the omelette onto a plate and garnish with the remaining spring onions.
