Steps

  • Place the couscous in a large bowl and add 600ml of hot chicken or vegetable stock.
  • Cover the bowl and allow the couscous to stand for five minutes.
  • Heat the vegetable oil in a frying pan over medium heat.
  • Sauté the red onion in the pan for 2 to 3 minutes before removing from heat.
  • Stir the avocado, lime juice, herbs, chilli, and cooked onion into the couscous.
  • Serve the dish immediately.
