Steps

  • Melt the dripping in a hot saucepan.
  • Add the oatmeal and cook for 2 to 3 minutes.
  • Stir in the corned beef, breadcrumbs, and raw carrots.
  • Mix in the vegetable stock until well combined.
  • Spoon the mixture into a greased pudding basin.
  • Wrap the basin securely with pleated, greased aluminium foil and tie with string.
  • Steam the pudding over a medium heat for 90 minutes.
