Steps

  • Fry the onion in oil over low heat for 20 minutes.
  • Add the green pepper and garlic and cook for five more minutes.
  • Stir in the chopped tomatoes and simmer for 15 minutes.
  • Rub the cod fillets with oil and season with salt and pepper.
  • Fry the cod fillets in a heavy-based pan for four minutes on each side.
  • Add butter to the pan and baste the fish as it finishes cooking.
  • Add langoustine tails and tarragon to the sauce and cook for five minutes.
  • Spoon the sauce into bowls and place the cod fillets on top.
