Steps

  • Melt the chopped chocolate slowly in a heatproof bowl suspended over a pan of simmering water.
  • Whisk the milk, cream, and sugar in a saucepan and bring to the boil over medium heat.
  • Pour the boiling cream mixture over the melted chocolate and whisk until smooth.
  • Return the mixture to the pan, simmer briefly, then whisk in the butter one cube at a time.
  • Strain the sauce through a fine sieve and serve immediately.
