Steps

  • Blend sugar and butter in a food processor until combined.
  • Add flour and baking powder and blend again.
  • Incorporate eggs and lemon zest, blending until the mixture is smooth.
  • Spoon batter into two greased microwave-safe ramekins and microwave on full power for 3.5 minutes.
  • Boil 100g sugar and 100ml wine in a small pan over medium heat.
  • Add cardamom, vanilla, and apricots, then simmer for 6 minutes until syrupy.
  • Turn sponges out onto plates and top with apricots and syrup.
