Steps

  • Preheat the oven to 200°C.
  • Roll the pastry thinly on a floured surface and cut a 7cm circle using a chefs' ring.
  • Place the pastry on a baking sheet, brush with egg, and bake for 8-10 minutes until golden.
  • Mix the cream cheese, whipped cream, mandarin zest, and icing sugar in a bowl.
  • Spoon the mixture into a 7cm ring on a plate and chill in the fridge for 30 minutes.
  • Simmer mandarin segments with honey in a pan until softened and glazed.
  • Remove the ring from the cheesecake, top with the baked pastry, and serve with glazed mandarins.
