Steps

  • Preheat the oven to 200°C.
  • Butter a shallow ovenproof dish.
  • Add the water, onion, and apricots to a pan and bring to the boil.
  • Boil for five minutes and then drain.
  • Place the breadcrumbs into a large bowl.
  • Melt the butter in a pan and pour half onto the breadcrumbs.
  • Fry the chestnuts in the remaining butter over high heat until browned.
  • Add the fried chestnuts to the breadcrumb bowl.
  • Mix the apricots, onion, and parsley into the bowl.
  • Season the mixture with salt and pepper.
  • Transfer to the dish and bake for 25-30 minutes until crisp.
