Steps

  • Combine rib ingredients in a bowl, cover, and marinate in the fridge for four hours.
  • Heat oil in deep-fat fryer or heavy pan to 190°C.
  • Drain marinade from ribs and deep-fry in batches until browned.
  • Drain ribs on kitchen paper.
  • Simmer sauce ingredients in a large lidded pan over medium heat.
  • Add ribs to the sauce and simmer covered for 40-50 minutes until tender.
  • Remove the lid for the final five minutes of cooking.
  • Stir-fry garlic, ginger, and chilli in oil for 30 seconds.
  • Add cabbage and stir-fry for 2-3 minutes until wilted.
  • Combine with soy sauce and serve with the ribs and extra sauce.
