Steps

  • Separate the spareribs into individual ribs and cut into 7.5cm chunks.
  • Mix marinade ingredients and steep ribs for 25 minutes at room temperature.
  • Heat oil in a wok and brown marinated ribs in batches until dark.
  • Drain ribs on kitchen paper and place sauce ingredients into a clean wok.
  • Boil sauce, reduce heat, add ribs, cover, and simmer for 40 minutes.
  • Add water if dry, skim fat, and serve on a warm plate.
