Steps

  • Rub the steak with oil and season with salt and pepper.
  • Chargrill the steak in a smoking hot pan for 2 minutes per side or to your preference.
  • Remove the steak to a warm plate and rest.
  • Deglaze the pan with 100ml white wine and simmer until reduced by one third.
  • Stir in the cream and chilli and cook for 3 minutes.
  • Mix in half of the coriander and remove from heat.
  • Serve steak over 85g cooked noodles, pour over the sauce, and garnish with remaining coriander.
