Steps

  • Heat oil in a saucepan and fry onion, garlic, and chilli for 3 minutes.
  • Add 500ml of stock, bring to a boil, and then simmer.
  • Stir in spinach and simmer for 3 minutes.
  • Transfer to a food processor and blend until smooth.
  • Season with salt and pepper to taste.
  • Pour into a bowl and drizzle with cream.
