Steps

  • Combine ribs, peppercorns, bay leaves, parsley, onion, and carrot in a large saucepan.
  • Cover with water, bring to a boil, then simmer for 90 minutes.
  • Preheat the oven to 200°C.
  • Pierce the potatoes with a fork and rub them with olive oil and salt.
  • Bake the potatoes on the top shelf for 60 minutes or until soft.
  • Simmer the sauce ingredients in a saucepan.
  • Drain the ribs, coat them in sauce, and arrange on a roasting tray.
  • Roast the ribs for 20 to 30 minutes, basting with additional sauce halfway through.
  • Serve ribs with split potatoes topped with soured cream and fresh parsley.
